Vanilla Coconut Butter Cups

 

Butter cups are a very popular American candy and confectionery, consisting of cups made of different variety of chocolates; filled with butter made from again different ingredients. The outer layer can consist of milk, dark, white or even vegan chocolate and the inner filing can consist of butter made of almonds, peanuts or coconuts.  These are very delicious desserts and confectionery items. It is very easy to make at home. For coconut butter cups, the main ingredients that we require are Shredded Coconut, Vanilla(or any other essence or flavouring), Coconut Oil and natural sweeteners (either honey/maple syrup/stevia.)

Instructions for the outer layer(cups):

  1. Take 1 cup of Chocolate, 1 tbsp of coconut oil and boil it in In a double boiler or bowl on top of a small pot of boiling water.
  2. Whisk these ingredients together and form a mixture.
  3. Take a muffin tin with papercups/liners, and pour some of this mixture into those papercups inside muffin tins.
  4. Now, freeze these cups for about 5-10 minutes.

Instructions for making the filling:

  1. Take 1 cup of melted coconut oil, 1 cup of shredded coconut(depending on taste), 3-5 tbsp of a natural sweetener (honey/maple syrup/stevia) in a blender and grind it until it forms a paste resembling Almond butter. Head over here for  the complete recipe to make Coconut Butter.
  2. Now, take a bite size portion of this Coconut Butter, and pour it into each of the above cups.
  3. After this, cover the cups with the outer Chocolate mixture.
  4. Add some nuts and / or a sprinkle a pinch of sea salt / shredded coconut over these delicious cups.
  5. Freeze these cups for at-least one (1) hour or until they turn solid. YUMMY.

 

 

Coconut Butter Cups

Coconut Butter Cups, a really awesome dessert for anyone who needs to avoid refined sugar.

  • 1 Cup Dark chocolate
  • 3 tbsp Coconut Oil
  • 1 Cup Shredded Coconut
  • 1 tbsp Vanilla Extract
  • 3 – 5 tbsp Natural Sweeteners ((Maple Syrup/Honey/Stevia))
  1. Take 1 cup of Chocolate, 1 tbsp of coconut oil and boil it in In a double boiler or bowl on top of a small pot of boiling water.

    Whisk these ingredients together and form a mixture.

  2. Take a muffin tin with papercups/liners, and pour some of this mixture into those papercups inside muffin tins.

    Now, freeze these cups for about 5-10 minutes.

  3. Take the 2 tbsp coconut oil, shredded coconut, vanilla extract and sweetener in a blender and blend them up until it forms a paste similar to Peanut / Almond Butter.

  4. Now, take a bite size portion of this Coconut Butter, and pour it into each of the above cups.

    After this, cover the cups with the outer Chocolate mixture.

  5. Add some nuts and / or a sprinkle a pinch of sea salt / shredded coconut over these delicious cups.

    Freeze these cups for at-least one (1) hour or until they turn solid. YUMMY.

  1. These cups can be stored in a refrigerator or freezer easily for about a period of two weeks.
  2. You can make different versions of cups, with different filling and/or outer layering, like Almond / Peanut filling.
