Hara Bhara Kabab (Green Cutlets)

Hara Bhara Kababs, a really healthy 30-minute cutlet and kabab recipe from North Indian Cuisine is one of delicious snack to binge on. We can make it in just 30-minutes, and this is an awesome tea-time snack. It can be easily made and stored in refrigerator, and fried/baked whenever you want to serve or eat them.

It can be stored for about 3 days without getting spoilt. So, let’s get started to make this delicious snack.

This recipe involves two main steps.

  1. The first is making the outer layer/covering.
  2. The second involves making the stuffing to be filled inside the cutlet.

For making the outer Layer/Covering:

  1. Boil the potatoes and green peas in a pan or pressure cooker in salted water.
  2. After boiling, crush/smash the potato-peas mixture in a bowl. Add Red Chilli Powder, Turmeric Powder, Dried mango Powder to it.
  3. Now, blanch the spinach and roughly chop it.
  4. In an electric mixer/grinder, take the spinach, ginger, green chillies and grind them into a smooth paste.
  5. Add this spinach paste to the potato-peas mixture.
  6. Roast  some gram flour (Besan) and add it to this mixture. Prepare a dough out of this mixture.
  7. Make cutlets/balls of desired shape from this dough.

For Stuffing:

  1. For stuffing to be used inside, we can use either processed cheese, mozzarella cheese, or cottage cheese (paneer).
  2. We can also use marinated cheese/paneer, or can combine them with chopped carrots/capsicum.

For making the cutlets:

  1. Take some of the dough and make small balls out of it. Flatten this ball on your palm and add some filling inside and give them the desired shape. 
  2. After this, you can stir fry/deep fry/bake them according to your liking.
  3. A Delicious and Yummy snack is ready. You can serve these cutlets with different Sauces, Green Mint Chutney or any other dip.

For Covering/Outer Layering:

  • 1 Cup Spinach
  • 2 Medium sized Potatoes
  • 1 Cup Green Peas
  • 1 tsp Ginger
  • 1 tsp Turmeric
  • 1 tsp Red Chilli Powder
  • 2-3 Green Chilies
  • 1 tsp Garam Masala
  • 1 tsp Dried mango Powder
  • Salt – To taste
  • 4 tbsp Breadcrumbs
  • 3 tbsp Roasted Gram Flour
  • 3 tbsp Oil

For Stuffing:

  • 50 gm Processed Cheese/Mozzarella
  • 25 gm Cottage Cheese (Paneer) ((Optional))
  • 1 small Chopped Carrot ((Optional))
  • 1 tsp Chaat Masala
  1. For making the outer Layer/Covering:

    We can also use marinated cheese/paneer, or can combine them with chopped carrots/capsicum.

  5. For making the cutlets:

    Take some of the dough and make small balls out of it. Flatten this ball on your palm and add some filling inside and give them the desired shape. 

  6. After this, you can stir fry/deep fry/bake them according to your liking.

    A Delicious and Yummy snack is ready. You can serve these cutlets with different Sauces, Green Mint Chutney or any other dip.

  1. The quantity of potatoes, spinach and/or peas can be changed according to your liking.
  2. A lot of different kinds of stuffing/filling can be used. We can also use marinated Cheese/Paneer as well.
